TURMERIC CAULIFLOWER RICE

I HAVE NEVER REALLY LIKED RICE, BUT WHEN YOU HAVE A CURRY YOU DEFINITELY NEED SOMETHING TO GO WITH IT AND SOAK UP ALL THAT SAUCE AND A PESHWARI NAAN IS ONLY FOR TREATS, SO HERE IS THE PERFECT SOLUTION - IT REALLY DOES HAVE THE SAME SATISFYING "FILLING" QUALITY THAT RICE OR NAAN GIVE, BUT WITHOUT ALL THOSE STARCHY CARBOHYDRATES OR GLUTEN, INSTEAD YOUR GETTING THE ANTICANCER BENEFITS OF CRUCIFEROUS VEG - I LOVE IT! BEST OF ALL MAKING A BIG BATCH (PROBABLY DOUBLE THIS RECIPE AS IT JUST GOES SO QUICKLY IN MY HOUSE) GIVES YOU LEFTOVERS TO USE FOR LUNCHES.  EASY PEASY.

Turmeric cauliflower rice, a great way to up your veg and decrease your grains!

Serves 3

Pre-heat oven to 220 deg C.

  • One whole large head cauliflower, broken into small florets
  • 3 tbsp turmeric
  • Drizzle olive oil
  • Generous grind rock salt.      
  1. Pulse small batches of the cauliflower florets in a blender to the texture of cous-cous
  2. Spread out the blitzed cauliflower in large oven tray
  3. Sprinkle over the turmeric and salt and drizzle over the olive oil
  4. Mix together with a spoon/fork so spice and salt and olive is coating the cauliflower
  5. Bake in preheated oven for 12 minutes
  6. Take out stir again and serve.
