• 2 mango finely chopped
  • 90g baby tomatoes, chopped
  • 1-2 avocados, diced
  • 15cm piece of cucumber, chopped
  • bunch fresh parsley, chopped
  • bunch fresh mint, chopped
  • handful of shaved coconut
  • 2 tbsp dessicated coconut
  • 3 tsp coriander seeds
  • 1 small red chilli, finely diced
  • 2 tbsp extra virgin olive oil
  • freshly ground rock salt & pepper

Combine everything in a large bowl.

    This is a real anti-inflammatory hero and a great accompaniment to some grilled white fish or prawns. I also have it with Almond and Coconut Hotcakes with a couple a poached eggs for brunch!
