As raspberry is my all time favourite fruit which I usually find a way to incorporate into anything it  was a no-brainer to put together this very simple chia pudding recipe which gives you a delicious, filling and nutrient dense start to your day. I have t with a couple of tablespoons of The Nourished Soul Cacao-Coconut granola and a dollop of yoghurt. Make the full recipe and you have 4 in the fridge to give you some delicious breakfast variety. It taste so good it can double up as a desert -winner!

  • 1 cup coconut pulp - I use Biona coconut milk and scoop out just then pulp - but I have just found an amazing new product - Lucy Bee Creamed coconut which is just pure coconut flesh, it's awesome

  • 2 tbsp. goji berries

  • 1/2 cup chia seeds

  • 2 cups fresh (or frozen) raspberries

  • 4 tbsp coconut water

  • 1 tsp lime juice

  • 1 tsp honey/maple syrup (optional)

 

 

 

 

 

  1. In a small bowl pour the coconut water over the goji berries to soften them up for 5-10 minutes.

  2. Tip the raspberries and coconut pulp and soften goji's Into a blender or a bowl (if using a hand blender) and blend together. Taste the mixture at this point - if you want it slightly sweeter add the honey - I find you don't need it.

  3. Tip in the chia seeds and stir them through so everything is thoroughly mixed together.

  4. Pour the mixture into 4 ramekins or glass and leave to set. You can eat it straight out of these or tip it out as I have done to make a proper brunch fr yourself.
